Pasta!

So, given the fact that people were increasingly generous to us when we got married, Eric and I have quite a bit of Williams-Sonoma credit. This is the PERFECT thing for us, as we (obviously) spend a lot of time in the kitchen. We have been debating what to get since we returned from our honeymoon. Something that has continually come out of Eric's mouth is the pasta rolling attachment for our Kitchenaid. I himmed and hawed about it for a while, and he was pretty patient, but then today, we both agreed, was a pasta making day.

And THIS is what happened!!


As with any good pasta making experience you must start with a beer. Not for cooking of course, just for drinking.







Then you take
3.5 cups bread flour
1/2 tsp of salt and put in the Food Processor or mixer with the beater
Next, in a 2 cup liquid measure, beat 4 eggs and 1 Tbs. water
pour mixture into Food Processor while processor is on for about one minute, it should be dry and will NOT form a ball.
It should look like this:

then pull it out in chunks
kneed into a ball and cut into 8ths





Here's the evolution of the dough as we did the kneading process through the pasta maker attachment, folding it into a rectangle and pushing it back through as we periodically narrowed the width and then folded it into a rectangle/squarish shape. The bottom one is ready to go through the final progression of widths.
















First run through on widest setting...



It will get progressively smoother and longer...
And now the finished product!!



We are pretty excited about it!!

The only downside to this event is the aftermath of the kitchen....

    when i dry my pasta, i use a drying rack (like for clothes).
